Creamy Vegetable Enchiladas

January 13, 2020 by Linden Desai Leave a Comment

We try to eat meatless a few times per week (and at most snacks). Sometimes that means vegan meals, sometimes it means cheesy, filling enchiladas like these! I recommend using corn tortillas (check in their sold by a local company or in the health freezer section of your grocery store). If you can’t find them, … [Keep reading…]

Curried Cottage Pie

January 4, 2020 by Linden Desai Leave a Comment

The idea for this recipe came when I was experimenting with Ethiopian food. I’m not exactly a purist when it comes to cooking (all about that fusion food), and I’ve wanted to find a way to enjoy cottage pie more for years. I love mashed potatoes, veggies are my jam, but even making the pie … [Keep reading…]

Sausage, Feta, and Sundried Tomato Hand Pies

January 13, 2019 by Linden Desai Leave a Comment

Hand pies have been on my list of foods to make for a while now. They are SO versatile, kids love eating anything they can hold (although Tess turned her nose up at the filling of these ?), and I just find them so appealing! These are a joint effort by my husband and I. … [Keep reading…]

Chicken Artichoke Lasagna Florentine

December 11, 2018 by Linden Desai Leave a Comment

When you see that artichokes are on sale at your local grocer, it’s impossible to leave them as far as I’m concerned. Whether or not I had any clue how to prepare them ahead of time, had never bought them fresh before, and had only come across extremely unhealthy recipes (aside from plainly roasting them.. … [Keep reading…]

BBQ Chicken Protein Pizza

December 2, 2018 by Linden Desai Leave a Comment

Eating clean can sometimes look a little light from the outside. Maybe you aren’t up for eating flatbreads with Cottage cheese or eating dry chicken wings. I get it. Sometimes you just need a saucy, heavy slice of pizza covered in goodness. This dough recipe is adapted from the popular 4 Ingredient Bagels that you are seeing everywhere. … [Keep reading…]

“Strong not Skinny” Fish Casserole

September 17, 2018 by Linden Desai Leave a Comment

I’m not a huge fan of the term “strong not skinny” usually because it implies that there is something wrong with skinny people (who are usually perfectly healthy!). You see the term “skinny” applied to recipes often because it gets your blog the most traffic while making it clear that it’s weightloss friendly. I create … [Keep reading…]

Authentic Zoodle Pad Thai

August 1, 2018 by Linden Desai Leave a Comment

The name of this dish sounds like an oxymoron. “Traditional, authentic style pad thai does NOT have Zoodles,” you yell. “Explain yourself!” If you insist. 😉 I love making Asian food that tastes as close to the original as possible, but I’m also on a health journey. When creating the sauce, I translated recipes, searched … [Keep reading…]

Sun-dried Tomato Kale Pesto Pasta (with Vegan Option!)

June 5, 2018 by Linden Desai 2 Comments

Pesto is possibly the king of simple sauces. Usually containing only 4-5 ingredients blended together, no cooking required, and good on everything, pesto deserves its popular status! Unfortunately, in order to achieve the creamy, comforting style pesto that we sometimes want, it requires a LOT of oil and a LOT of cream! This recipe is … [Keep reading…]

Lemon Cheesecake Wonder Whips

May 29, 2018 by Linden Desai Leave a Comment

This recipe is going to sound a bit crazy at first. If you want to, you can totally just use 1 cup of greek yogurt. Personally, I wanted that creamier cheesecake flavour.

Caramel Mocha Wonder Whips

May 17, 2018 by Linden Desai Leave a Comment

Coffee coffee coffee! I am a huge coffee fan, but I prefer to limit my intake of caffeine. One of my major weaknesses are caramel or mocha lattes. This way, I get all of the yummy coffee and sweet flavours without the calorie count or caffeine of a Starbucks drink!
