One of the foods that I find the most difficult to miss when eating clean is muffins. You can make baked oatmeal, but it’s just not the same, and the rest are packed full of sugar. That’s why I spend so much time experimenting with healthy, low sugar muffin options, so I never have to miss out on my favourite snacks!
This recipe has a serving of fibre filled carbs and half a serving of fruit to satisfy any cravings and keep you full for longer! Feel free to substitute orange juice and zest if that’s more your thing.
Clean Eating Cranberry Lemon Muffins
- 1 1/2 cup oat or whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 medium bananas very ripe
- 1 large egg beaten
- 1/4 cup coconut oil melted
- 1/2 tsp vanilla
- zest of 1 lemon
- juice of 1 lemon about 3 tbsp
- 3/4 cup cranberries I halved mine
Preheat oven to 350F.
Combine dry ingredients and zest in a bowl with a whisk.
In a separate bowl, mash the bananas. Stir in egg, coconut oil, vanilla, and lemon juice until combined.
Make a well in the flour mixture. Pour the wet ingredients into the well and stir until just combined. Fold in cranberries,
Pour muffin mixture into lined a lined muffin tray. Bake for 22-27 minutes, check after 22. Let cool fully before removing from wrapper.
