The berries and juices are sweet and tart and the silken tofu makes this dessert perfectly creamy!
This little cup packs a full serving of fruit and protein while staying under 150 calories!
Feel free to add 1 tbsp of honey or maple syrup if you like sweeter desserts (or omit the lemon juice!). I like a mix of tart and sweet 😋

Berry Tofu Mousse
Vegan, gluten free, and delicious - have this as part of a balanced breakfast, dessert, or snack!
- 2 1/4 cups silken tofu
- 2 cups frozen strawberries or mixed berries
- 2 tsp vanilla extract
- 4 oz orange juice fresh squeezed
- 1 tbsp lemon juice
- Shredded coconut optional
Combine first 5 ingredients in a blender for at least a minute or until creamy. Pour into 3 raclettes, bowls, or containers. Leave to set in the fridge for at least 1 hour.
Optionally, top with shredded coconut or shaved dark (at least 70%) chocolate. Enjoy!
