Sweet treats are one of those things that we all love but dont often serve our goals. Luckily, that is NOT the case for this pudding. It is packed full of protein from silken tofu, fibre and potassium from bananas, and iron and magnesium from cocoa powder!
To make this vegan, gluten free treat as decadent as possible, make sure you use one VERY ripe large or two VERY ripe small bananas and only use soft, silken tofu! You may include 1 tbsp honey or maple syrup if you want an extra treat.
Consider adding 1 tbsp of peanut butter powder when you’re craving salt (or 1 tbsp of natural peanut butter, but don’t forget to count the additional 1 tsp if you follow portion fix!). Top the pudding with a couple sliced strawberries or slices of banana to bring this to a full serving of fruit.
I topped mine with 1 tsp of cacao nibs and chia seeds to add some texture!

Chocolate Banana Tofu Pudding
Vegan, gluten free, and delicious!
Ingredients
- 1 large VERY RIPE banana
- 2 1/4 cups silken tofu about 450g
- 1/3 cup cocoa powder unsweetened
- 3 tsp cacao nibs optional
Instructions

Combine first 3 ingredients in a blender until smooth, at least one minute.

Pour into 3 bowls, raclettes, or containers. Set for at least one hour in the fridge. Optionally, top with cacao nibs or a few slices of fruit before serving.
