Eating clean can sometimes look a little light from the outside. Maybe you aren’t up for eating flatbreads with Cottage cheese or eating dry chicken wings. I get it. Sometimes you just need a saucy, heavy slice of pizza covered in goodness.
This dough recipe is adapted from the popular 4 Ingredient Bagels that you are seeing everywhere. The changes were made to create a fluffier, sturdier dough to use as a pizza base. Trust me, you’ll be thrilled. For other pizza styles, feel free to add mix ins to the dough! Oregano, roasted garlic, cheese.. Now, I’m getting hungry again! Luckily, I have a fridge full of pizza to help me out!
I made my own healthy BBQ sauce based on this recipe. I LOVE a good BBQ sauce. I would not recommend it if it wasnt perfect for this recipe despite being healthier. It is milder than your typical BBQ, but it can be amped up if that’s how you like it on pizza! Personally, I like multiple flavours to pull through in recipes like this. Feel free to sub in your own favourite sauce!!
This recipe counts as:
Bbq chicken pizza
- 1 1/2 cups white whole wheat, or gluten free flour
- 1 cup plain 2% Greek yogurt
- 3 tsp baking powder
- 1 1/4 tsp salt
- 3 tsp olive oil
- 2 1/4 cups shredded chicken breast about 2 breasts
- 1/2 recipe BBQ sauce shared above or as much as you like!
- 1/2 medium zucchini sliced into coins
- 1 cup red pepper sliced into strips
- 1 cup shredded cheese I used triple cheddar
Combine the ingredients under dough except for olive oil. Kneed (or run your stand mixer with the dough attachment!) until fully combined, about 10 minutes by hand or 3-5 in a mixer.
Spread onto a lightly oiled pan or pizza stone to your desired shape, making sure that the dough is even throughout. Brush with the olive oil. Bake at 500F for 5 minutes.
Stir the sauce into the shredded chicken. Spread the chicken over the pizza crust evenly, leaving about 1/2 inch clear from the edge. Top with zucchini, peppers, and cheese.
Bake for 11 minutes at 500F.
Cut into 6 slices. 2 slices is a serving!
